Maybe it’s something to do with the season, but the past few weeks I’ve been really enjoying the healthy/crunchy/sometimes-even-raw thing. I mean actually enjoying the taste, not just the virtuous feeling that comes from eating that kinda stuff.
Breakfast-y mess of veggies for dinner: Fingerling potato leek hash
Lunch Staple: Raw kale salad with cherries and pecans
Have you tried quinoa? I did once and ignored the step where the recipe called for a good thorough wash. That was back in 2005 and I just recently tried it again – boy have I been missing out :) It really does need washing because the grain is coated with saponin (a bitter substance the plant produces to protect itself from getting eaten) and if you don’t wash it, it tastes BAD. Derp. But I washed it and used it in this recipe: Tabasco asparagus quinoa
I just used this as a general guideline for a carrot and beet salad. It was quite tasty with only rice wine vinegar, sesame + olive oil, soy sauce, and sriracha if you’re feeling lazy like me!
Not your standard beet…
